Shaping the head of the bay tree is an easy job which can be performed with secateurs or snips. The head or bush has dark-green foliage that can create stunning formal shapes. Not only does the tree provide a great focal point to any entrance or patio the Bay leaves can be used fresh or dried and are used in cooking to give a fragrant flavour to soups, stews and other dishes.
Feed bays every time you water throughout the summer. Keep compost moist but not wet and reduce feed in the winter. Trim bays to shape with secateurs cutting back to a lower leaf in spring or summer.
In winter you can always give your bay tree some extra protection with a fleece covering just to protect from frost if temperatures are likely to drop below -5. If your bay trees are pot grown, you can move to a location next to a heated wall or sheltered area away from the wind.
Bay leaves and how to cook with them!
Great in stews using beef, pork, poultry, vegetables, using only 3 or 4 leaves.
Add bay leaves to mashed potatoes a few leaves go a long way and will really add some flavour. Just add the leaves to boiling water, add the potatoes and cook. Remove the leaves before serving.
