Tomato, Basil & Chicken Tortilla Pizza by Fiona
Full of summer flavour and ready in a jiffy, simply serve with a crispy salad.

Ingredients
- 4 flour tortilla
- 4 heaped tsp basil pesto
- chilli sauce -optional
- 200g sunblush tomatoes
- handful basil leaves, roughly torn
- 2 chicken breast, cooked & roughly cubed
- 1 ball mozzarella, divided into 4
- handful grated cheese

Method
Pre-heat oven to 200 degrees C
1. Place each tortilla on a pizza tray. Mix the pesto with chilli sauce (to taste) then spread a heaped teaspoonful over each.
2. Divide the tomatoes, torn basil leaves and chicken cubes between each pizza. Top with torn mozzarella and a little grated cheese.
Bake until piping hot and cheese is melted - about 10 mins.
