Good King Henry has been used as a vegetable for centuries. This versatile perennial is also known as Lincolnshire Spinach and can be cooked and used in just the same way, its leaves are rich in iron, calcium and Vitamin C. It can also be forced in spring and young shoots used like asparagus.
Now returning in popularity as a perennial garden vegetable the young leaves can be use in salads, older leaves cooked like spinach, leaves and flower buds can be steamed or sauteed.
Being hardy, it can even provide pickings through the winter if covered with a cloche or similar protection.

Sow Outdoors: May-August thinly ½in (1cm) deep direct in harvest location. Keep soil moist at all times.
Thin Out: 12in (30cm) apart.
